Pumpkin Bread with Mandarin Pumpkin Marmalade December 08 2013
A yummy little twist to Classic Pumpkin Bread!
1 3/4 cups sifted flour
1 cup sugar
1 tblsp baking powder
1 tsp grated nutmeg
1 tsp cloves
1 tsp cinnamon
1 tsp allspice
1/3 cup peanut oil
1/3 cup water
1 jar 9 oz. Mandarin Pumpkin Marmalade
1 cup canned pumpkin puree
3/4 cup chopped pecans (optional)
1/3 cup rasins or dried currants (optional)
Preheat oven to 350 degrees. Oil and flour a 9 x 5" loaf pan. In a large bowl, mix together all dry ingredients, add oil, water and eggs. Mix until smooth. Add Mandarin Pumpkin Marmalade and pumpkin puree, blend well and add nuts and fruit if desired. Bake approximately 1 1/2 hours or until inserted fork comes out clean.
This bread is delicious with cream cheese or Mascarpone cheese. The recipe yields 1 large loaf or 4 small loaves and they freeze well.
